The serpent is identified with both wisdom and cunning, as it was the snake who lured and deceived Eve with the promise of forbidden knowledge. In contrast when mounted on a staff the snake then represents healing. The apple has become a symbol for knowledge, immortality, temptation and sin. However when held by Christ, the apple then symbolises salvation and triumph over sin.
